🍫πŸͺ Protein Chocolate Chip Cottage Cookies – Chewy, Guilt-Free & Delicious!

These high-protein chocolate chip cookies are made with cottage cheese for a guilt-free treat that’s chewy and delicious.

  • 1 cup (226g) cottage cheese
  • 1/2 cup (113g) natural peanut butter
  • 1/3 cup (75g) brown sugar
  • 1/4 cup (59mL) milk
  • 1 tsp vanilla extract
  • 1 cup (120g) oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (85g) chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, mix together the cottage cheese, peanut butter, brown sugar, milk, and vanilla extract until smooth.
  3. In another bowl, whisk together the oat flour, baking powder, baking soda, and salt.
  4. Stir the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chocolate chips.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently press them down slightly with a fork.
  7. Bake for 10-12 minutes, or until the edges are golden. The centers should still look a bit soft.
  8. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 5 days. For best results, use full-fat cottage cheese. These cookies are freezer-friendly – freeze them in a single layer and then transfer to a zip-top bag once frozen.
