Layered bars featuring a graham cracker crust, creamy pumpkin cheesecake filling, and a sweet streusel topping – the ultimate fall dessert.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Line a 9×9 inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, granulated sugar, and melted butter. Press firmly into bottom of prepared pan.
  3. Beat cream cheese until smooth. Add pumpkin, brown sugar, eggs, vanilla, pumpkin pie spice, and salt. Mix until well combined.
  4. Pour cheesecake mixture over crust and spread evenly.
  5. Combine flour, oats, and pecans. Sprinkle streusel topping over cheesecake layer.
  6. Bake for 35-40 minutes until center is set. Cool completely before cutting into bars.

You can customize the seasonings to taste.
