For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 3/4 cup canned pumpkin puree
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Line a 9×9 inch baking pan with parchment paper.
- Mix graham cracker crumbs, granulated sugar, and melted butter. Press firmly into bottom of prepared pan.
- Beat cream cheese until smooth. Add pumpkin, brown sugar, eggs, vanilla, pumpkin pie spice, and salt. Mix until well combined.
- Pour cheesecake mixture over crust and spread evenly.
- Combine flour, oats, and pecans. Sprinkle streusel topping over cheesecake layer.
- Bake for 35-40 minutes until center is set. Cool completely before cutting into bars.
