Pumpkin Ginger Soup

A creamy, aromatic fall soup featuring pumpkin, fresh ginger, and warming spices. This cozy, nutritious soup is perfect for chilly evenings and can be made in under an hour.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups pumpkin purée
  • 3 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the garlic and ginger, cooking until fragrant, about 1 minute.
  4. Add pumpkin purée, vegetable broth, cinnamon, nutmeg, salt, and pepper. Stir to combine.
  5. Bring soup to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the coconut milk and simmer for an additional 5 minutes.
  7. Use an immersion blender to puree the soup until smooth.
  8. Adjust seasoning to taste and serve hot.

Notes

Garnish with roasted pumpkin seeds or a swirl of extra coconut milk for added texture and flavor.
