Raspberry White Chocolate Stuffed Cookies

Soft, chewy cookies with a sweet raspberry and white chocolate center that oozes with flavor in every bite.

For the Crust:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/2 cup raspberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Cream together butter and sugars until fluffy. Beat in eggs and vanilla.
  3. Whisk together flour, baking soda, and salt; gradually mix into wet ingredients. Fold in white chocolate chips.
  4. Scoop dough into 2-tbsp portions. Flatten each, add 1/2 tsp raspberry jam to center, then seal dough around it.
  5. Bake for 10-12 minutes until edges are golden. Cool on baking sheet for 5 minutes before transferring.
