For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line an 8×8 inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the prepared pan.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon zest, lemon juice, and vanilla.
- Gently fold in blueberries. Pour mixture over crust and spread evenly.
- Bake for 30-35 minutes until center is set. Cool completely, then refrigerate for at least 2 hours before slicing.
