Roasted Beet & Blue Cheese Towers with Pear & Balsamic Glaze

Layers of roasted beets, blue cheese, and pears topped with a balsamic glaze create elegant towers that are as visually stunning as they are delicious.

Ingredients

  • 4 medium beets
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 4 ripe pears, thinly sliced
  • 8 ounces blue cheese, crumbled
  • 1/4 cup chopped walnuts
  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and trim beets, then wrap each in foil and roast for 45-50 minutes until tender. Let cool, then peel and slice into rounds.
  3. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer and cook until reduced by half, about 10 minutes. Set aside to cool.
  4. Layer beet slices, pear slices, blue cheese, and walnuts into towers on plates.
  5. Drizzle with balsamic glaze and garnish with thyme. Serve immediately.

Notes

For best results, let the balsamic glaze cool to room temperature before drizzling. Towers can be assembled just before serving to prevent sogginess.
