Roasted Beet Blue Cheese Towers with Pear, Walnut & Balsamic Glaze

Delicious and elegant towers featuring roasted beets, creamy blue cheese, fresh pears, crunchy walnuts, and a tangy balsamic glaze. Perfect for a fancy appetizer or side dish.

Ingredients

  • 4 medium beets, roasted and peeled
  • 4 ounces blue cheese, crumbled
  • 2 ripe pears, thinly sliced
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh arugula for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roast the beets by wrapping them in foil and baking for 45-60 minutes until tender. Peel and slice into rounds.
  3. Reduce balsamic vinegar in a saucepan over medium heat until syrupy, about 5 minutes. Stir in honey and set aside.
  4. On each serving plate, stack beet rounds alternating with blue cheese crumbles and pear slices to form towers.
  5. Drizzle with balsamic glaze, sprinkle with walnuts, and garnish with arugula. Season with salt and pepper.
  6. Serve immediately.

Notes

For extra crunch, toast the walnuts in the oven for 5 minutes. Use gloves when handling beets to avoid staining.
