Roasted Carrot & Honey Ricotta Toasts

Sweet roasted carrots topped with honey ricotta on toasted bread, perfect for breakfast or a light lunch.

Ingredients

  • 1 pound carrots, peeled and sliced lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 8 slices bread, toasted
  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes until tender.
  4. Mix ricotta with honey.
  5. Spread ricotta on toasted bread and top with roasted carrots.
  6. Garnish with thyme and serve.

Notes

Use fresh, in-season carrots for best flavor. Drizzle extra honey if desired.
