Roasted Tomato Basil Soup

A rich and flavorful soup made with roasted tomatoes and fresh basil.

For the Crust:

  • 2 lbs ripe tomatoes, halved
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 4 cups vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Arrange tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  2. Roast for 25-30 minutes until tomatoes are softened and slightly caramelized.
  3. Transfer roasted vegetables to a blender or food processor. Add basil and vegetable broth. Blend until smooth.
  4. Pour the mixture into a pot and simmer over medium heat for 10 minutes. Stir in heavy cream if using. Adjust seasoning to taste.

Notes

You can customize the seasonings to taste.
