Rustic White Bean & Smoked Beef Soup – A Hearty Bowl of Comfort

  • 1 pound smoked beef brisket, chopped
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
  3. Add chopped smoked beef brisket and cook for another 5 minutes until browned.
  4. Stir in white beans, beef broth, thyme, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  6. Season with salt and pepper to taste.
  7. Remove bay leaves before serving.
  8. Ladle into bowls and enjoy hot.

Notes

For extra smokiness, use more smoked beef. This soup tastes even better the next day. Store leftovers in the fridge for up to 3 days or freeze for longer storage.
