  • Zest of 1 lemon
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened, about 5 minutes.
  2. Stir in saffron threads and lemon zest, cook for 1 minute to release aromas.
  3. Pour in chicken broth and bring to a boil. Add chicken cubes, reduce heat, and simmer for 10 minutes.
  4. Stir in carrots, celery, and egg noodles. Cook until noodles are tender and vegetables are soft, about 8-10 minutes.
  5. Season with salt and pepper. Garnish with fresh parsley before serving.
