πŸ₯’ Slow Cooker Asian BBQ Beef Ribs with Udon Noodles

Tender Asian-inspired BBQ beef ribs slow-cooked to perfection, served over fluffy udon noodles for a comforting meal.

  • For the Ribs:
  • 2 lbs beef ribs, trimmed
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tbsp brown sugar
  • 1/4 tsp red pepper flakes
  • For the Noodles:
  • 8 oz udon noodles
  • 1 tbsp vegetable oil
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. Prepare the marinade by whisking together soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, brown sugar, and red pepper flakes.
  2. In your slow cooker, add the ribs and pour the marinade over them. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  3. Once done, carefully remove the ribs from the slow cooker. Shred the meat off the bones if desired.
  4. Cook udon noodles according to package instructions. Drain and toss with vegetable oil.
  5. Serve the ribs over the noodles, topped with green onions and sesame seeds.

Notes

Adjust the spice level to your preference by adding more red pepper flakes.
Leftover ribs can be stored in the fridge for up to 3 days.
