Slow Cooker Asian BBQ Beef Ribs with Udon Noodles

Tender, slow-cooked beef ribs glazed in a sweet and savory Asian BBQ sauce, served over slurpy udon noodles for a comforting, flavorful meal.

  • 2 lbs beef short ribs
  • 3/4 cup hoisin sauce
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup beef broth
  • 4 packs udon noodles
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. In a bowl, whisk together hoisin sauce, soy sauce, rice vinegar, honey, garlic, ginger, and beef broth.
  2. Place beef ribs in the slow cooker and pour the sauce over them.
  3. Cook on low for 6-8 hours or high for 4 hours until ribs are tender.
  4. Cook udon noodles according to package instructions.
  5. Serve ribs over noodles, topped with green onions and sesame seeds.

Notes

For extra flavor, sear the ribs before slow cooking. Leftovers reheat well in the microwave.
