Slow Cooker Lemon Herb Chicken Rice

A flavorful and easy slow cooker dish featuring tender chicken, zesty lemon, fresh herbs, and savory rice cooked to perfection.

  • Chicken & Marinade:
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Rice & Veggies:
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped fresh parsley

Instructions

  1. Prepare the chicken marinade by whisking together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper in a bowl.
  2. Place chicken breasts in the slow cooker and pour the marinade over them. Let marinate for 15 minutes if time allows.
  3. Add rice, chicken broth, lemon slices, and cherry tomatoes to the slow cooker.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked through and rice is tender.
  5. Stir in fresh parsley before serving. Garnish with additional lemon wedges if desired.

Notes

Use fresh herbs for best flavor. Adjust slow cooker times based on your model.
