Slow Cooker Lemon Herb Chicken Rice

Tender chicken breasts simmered with lemon, herbs, and rice in a slow cooker for an easy, flavorful meal.

Ingredients

  • Chicken Marinade:
  • – 4 boneless, skinless chicken breasts
  • – 1/2 cup lemon juice
  • – 2 tablespoons olive oil
  • – 2 cloves garlic, minced
  • – 1 teaspoon dried thyme
  • – 1 teaspoon dried rosemary
  • – Salt and pepper to taste
  • Rice and Vegetables:
  • – 1 cup long-grain white rice
  • – 2 cups chicken broth
  • – 1 cup diced carrots
  • – 1 cup chopped celery
  • – 1 onion, diced
  • – Zest of 1 lemon

Instructions

  1. Chicken Preparation:
  2. 1. In a small bowl, whisk together lemon juice, olive oil, garlic, thyme, rosemary, salt, and pepper.
  3. 2. Place chicken breasts in a slow cooker and pour marinade over them. Toss to coat.
  4. 3. Marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  5. Cooking the Dish:
  6. 4. Add rice, chicken broth, carrots, celery, and onion to the slow cooker with the marinated chicken.
  7. 5. Sprinkle lemon zest over the top.
  8. 6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and rice is tender.
  9. 7. Shred the chicken slightly before serving, if desired.

Notes

For a vegetarian version, substitute chicken with tofu or extra vegetables. Adjust seasoning to taste, and garnish with fresh herbs for extra flavor.
