2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 ripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Cinnamon Swirl: 1/4 cup brown sugar, 1 tablespoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
In a large bowl, mix the mashed bananas, melted butter, granulated sugar, eggs, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
In a small bowl, mix the brown sugar and ground cinnamon for the swirl.
Pour half of the batter into the prepared loaf pan, sprinkle with half of the cinnamon swirl mixture, then add the remaining batter and top with the rest of the swirl.
Use a knife to swirl the cinnamon mixture into the batter.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a crunchier texture, add chopped nuts like walnuts to the batter.
