Lemon Cottage Cookies – Soft & High-Protein

These soft, high-protein cookies are made with cottage cheese and lemon for a refreshing twist.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup lemon juice
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix cottage cheese, lemon juice, and zest.
  3. Add flour, sugar, baking powder, and salt. Mix until combined.
  4. Fold in softened butter to form a dough.
  5. Drop spoonfuls onto a baking sheet.
  6. Bake for 15-20 minutes until golden. Cool and serve.
