  • 3 cupscooked chicken breast, shredded
  • 12 ozspaghetti, cooked and drained
  • 1can (10.5 oz) cream of mushroom soup
  • 1can (10.5 oz) cream of chicken soup
  • 1can (10 oz) diced tomatoes with green chilies, drained
  • 1 cupchopped green bell pepper
  • 1 cupchopped red bell pepper
  • 1/2 cupchopped onion
  • 2 cupsshredded cheddar cheese, divided
  • 1/2 cupsour cream
  • 1 tspgarlic powder
  • 1 tspblack pepper
  • 1/2 tspsalt
  • 1/2 tsppaprika

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine cream of mushroom soup, cream of chicken soup, sour cream, garlic powder, salt, pepper, and paprika. Mix well.
  3. Add shredded chicken, drained diced tomatoes with green chilies, chopped green and red bell peppers, chopped onion, and 1 cup of shredded cheddar cheese to the mixture. Stir to combine.
  4. Fold in the cooked and drained spaghetti until fully coated in the creamy mixture.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Top with the remaining 1 cup of shredded cheddar cheese.
  7. Bake uncovered for 30–35 minutes, or until the casserole is bubbly and the cheese is melted and golden.
  8. Optional: Broil for 2–3 minutes for a crispier cheese topping.

Substitute plain diced tomatoes if you prefer less spice.
