Strawberry Cottage Cheese Popover Pancakes

These light and fluffy popover pancakes made with strawberries and cottage cheese are perfect for a bright morning.

  • 1 cup all-purpose flour
  • 1/2 cup cottage cheese
  • 1 cup fresh strawberries, sliced
  • 2 eggs
  • 1 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 425°F and grease a popover pan.
  2. In a blender, combine flour, cottage cheese, eggs, milk, sugar, vanilla, and salt until smooth.
  3. Fold in sliced strawberries gently.
  4. Pour batter into popover pan and bake for 15-20 minutes until puffed and golden.
  5. Serve warm with additional strawberries if desired.

Notes

For a gluten-free version, substitute all-purpose flour with almond flour.
