For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 1 cup whipped cream
- 1/4 cup strawberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line an 8×8 inch baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
- Bake for 30 minutes or until center is set. Cool completely, then refrigerate for 2 hours.
- Top with diced strawberries, whipped cream, and drizzle with strawberry jam before serving.
