  • 1 cup fresh strawberries, diced

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a mini muffin tin with cooking spray or butter.
  2. In a blender or food processor, combine the cottage cheese, eggs, flour, sugar, vanilla extract, baking powder, and salt. Blend until smooth.
  3. Fold in the diced strawberries gently.
  4. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 15-18 minutes, or until the bites are puffed and golden.
