Instructions

  1. Prepare the Ricotta Mixture: In a medium bowl, mix ricotta cheese, sun-dried tomatoes, spinach, Parmesan, and season with salt and pepper.
  2. Assemble the Sandwiches: Spread the ricotta mixture on one side of each bread slice, top with mozzarella, and form sandwiches.
  3. Grill to Perfection: Heat olive oil and butter in a skillet and grill the sandwiches for 3-4 minutes on each side.
  4. Serve and Enjoy: Let the sandwiches cool for a minute, slice, and serve!

Notes
