Super Fluffy Homemade Muffins

Ensure eggs are at room temperature for better batter consistency. Avoid overmixing to keep the muffins light and fluffy. Check muffins a couple of minutes early asoventimes may vary.

  • 1 1/3 cups(185g) all-purpose flour
  • 1 teaspoonbaking powder
  • 1/4 teaspoonsalt
  • 1/2 cup(115g) melted butter
  • 1 cup(200g) granulated sugar
  • 2large eggs, at room temperature
  • 1 teaspoonvanilla extract
  • 1/2 cup(120ml) whole milk

Instructions

  1. Preheat and Prep: Preheat yourovento 375°F (190°C). Line amuffin tinwith paper liners or grease it lightly.
  2. Mix Dry Ingredients: In a medium bowl,whisktogether the flour, baking powder, and salt.
  3. Combine Wet Ingredients: In a large bowl, mix the melted butter and granulated sugar until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Blend and Fold: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Fold gently until just combined.
  5. Fill and Bake: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Enjoy: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to awire rackto cool completely. Enjoy warm or at room temperature.
