For the Crust:
- 1 cup chopped pecans
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix flour, sugar, baking soda, salt, and cinnamon.
- In another bowl, whisk eggs, oil, milk, and vanilla. Stir into dry ingredients until just combined.
- Fold in chopped pecans. Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
