Sweet Alabama Pecan Bread

For the Crust:

  • 1 cup chopped pecans
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix flour, sugar, baking soda, salt, and cinnamon.
  3. In another bowl, whisk eggs, oil, milk, and vanilla. Stir into dry ingredients until just combined.
  4. Fold in chopped pecans. Pour batter into the prepared loaf pan.
  5. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  6. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
