Swicy Hot Honey Baked Brie Bombs

These Swicy Hot Honey Baked Brie Bombs are the perfect bite-sized treat! Creamy and gooey brie is baked inside a pillowy soft brioche roll with sweet and spicy hot honey drizzled over the top!

  • For the Hot Honey
  • 1/4 cup honey
  • 2 tbsp hot sauce (valentina’s)
  • 12 tbsp pickled jalapeño juice
  • 1/2 tsp cayenne pepper
  • For the Brie Bombs
  • 2 brioche rolls (mine were 12 oz each)
  • 1 wheel of brie (9 oz)
  • flour egg wash (1 egg mixed with 1 tbsp water)
  • sesame seeds for topping (optional)
  • 4 pickled jalapeños, chopped finer or to taste

Instructions

  1. Make the Hot Honey
  2. In a small bowl, add the honey, hot sauce, pickled jalapeño juice, and cayenne pepper. Mix until combined.
  3. Assemble the Brie Bombs
  4. Slice the brioche rolls into 12 equal sized squares(cubes). I sliced mine into 16 but you can make them smaller to increase yield. Square off the edges for even cubes.
  5. Use a melon baller or small spoon and scoop out the center of each cube, leaving about 1/4-1/2 inch thick walls. Gently press down to flatten the bottom. Pat the insides with a paper towel to get out any excess moisture.
  6. Cut the brie cheese into 1 inch sized cubes. You should get about 12 or so.
  7. Place one cube of brie and a few pieces of jalapeño into each brioche hole. Close/seal the tops with the reserved bread scraps. (You may need to trim the scraps to get them to fit.) Gently pinch the dough to seal it, be careful not to squeeze out too much.
  8. Once all are assembled, brush with egg wash and sprinkle sesame seeds if using.
  9. Bake the Brie Bombs
  10. Preheat the oven to 375°. Bake at 375°F for 15 minutes or until the outside is golden brown and the cheese is melted.
  11. Remove from oven and let cool slightly. Brush more egg wash if needed and bake for 2-3 more minutes to get a darker golden brown crust.
  12. Drizzle with the hot honey and serve immediately.

Notes

Notes: – Jalapeños are not very spicy, if you want more heat add more hot sauce to the hot honey. – Serve immediately for the best melted cheese. Leftovers can be warmed in a 225° oven to keep the integrity of the pastry. – Substitution idea: You can use Hawaiian rolls if brioche is unavailable.
