Taco Ranch Bites are crispy, cheesy, bite-sized appetizers made with seasoned ground beef, cheddar cheese, ranch dressing, and phyllo shells — perfect for parties, game day, or quick snacks.

Ingredients

Scale
  • 1lb lean ground beef
  • 1package (1 oz) taco seasoning mix
  • 1can (10 oz) diced tomatoes with green chiles, with juices
  • 2 cupssharp cheddar cheese, grated
  • 1bottle (8 oz) ranch dressing
  • 5packages (15 count each) frozen phyllo cup shells

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and diced tomatoes with green chiles (including juices). Simmer for 5 minutes.
  4. In a large bowl, mix cheddar cheese and ranch dressing.
  5. Stir in the seasoned beef mixture until well combined.
  6. Spoon the filling into each frozen phyllo cup shell.
  7. Bake for 10–13 minutes if frozen, or 8–10 minutes if thawed, until filling is hot and shells are golden.
  8. Cool slightly and serve warm.

Notes

Phyllo shells do not need to be thawed before baking.
Freeze unbaked bites in advance for quick prep later.
Try different cheeses like pepper jack for a spicy kick.
Top with chopped tomatoes, cilantro, or sour cream for extra flavor.
Makes approximately 75 mini bites — ideal for large gatherings.
