Ultimate Simple Tater Tot Casserole Recipe

This easy tater tot casserole is loaded with ground beef, cheese, and veggies, all baked to perfection for a comforting family dinner.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 bag (16 ounces) frozen tater tots
  • 1 cup frozen peas and carrots
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef with onion and garlic until beef is browned. Drain excess fat.
  3. Stir in soup, sour cream, and half the cheese until well combined.
  4. Spread mixture in a 9×13-inch baking dish. Top with frozen peas and carrots.
  5. Arrange tater tots evenly over the top.
  6. Bake for 25-30 minutes, then sprinkle remaining cheese on top and bake additional 5 minutes until cheese is melted.
  7. Let cool slightly and serve.

Notes

For extra flavor, add bacon bits or fresh herbs. This casserole can be prepped ahead and refrigerated until baking.
