For the Crust:
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup semi-sweet chocolate chips, melted
- 1/2 cup caramel sauce
- 1/4 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix cookie crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Divide the batter into two bowls. Stir melted chocolate into one half and caramel sauce into the other.
- Pour the chocolate batter over the crust, then gently layer the caramel batter on top. Use a knife to swirl the layers slightly.
- Bake for 50-60 minutes until the center is set. Let cool, then refrigerate for at least 4 hours.
- Before serving, drizzle with additional caramel sauce and melted chocolate if desired.
