For the Crust:

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1/2 cup caramel sauce
  • 1/4 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix cookie crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  3. Divide the batter into two bowls. Stir melted chocolate into one half and caramel sauce into the other.
  4. Pour the chocolate batter over the crust, then gently layer the caramel batter on top. Use a knife to swirl the layers slightly.
  5. Bake for 50-60 minutes until the center is set. Let cool, then refrigerate for at least 4 hours.
  6. Before serving, drizzle with additional caramel sauce and melted chocolate if desired.

Notes

You can customize the seasonings to taste.
