Ultimate Simple Tater Tot Casserole Recipe

This ultimate simple tater tot casserole is a hearty, comfort food classic featuring crispy tater tots, ground beef, veggies, and creamy cheese for a meal the whole family will love.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 0.5 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups shredded cheddar cheese, divided
  • 32 oz frozen tater tots
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. In a skillet, cook ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.
  3. Add diced onion and minced garlic to the skillet, cook for 2-3 minutes until softened.
  4. Stir in cream of mushroom soup, milk, frozen vegetables, and 1 cup of shredded cheese. Season with salt and pepper.
  5. Spread the beef mixture evenly in a 9×13 inch baking dish.
  6. Top with frozen tater tots, arranging them in a single layer.
  7. Bake for 25-30 minutes, then sprinkle remaining cheese on top and bake for another 5-10 minutes until tots are crispy and cheese is melted.

Notes

This casserole can be assembled ahead and refrigerated until ready to bake. Add extra cheese for cheesier version.
