Waffle Sandwich – Easy Brunch or Lunch Idea

A sweet and savory waffle sandwich made with slow-cooked brisket, melted cheddar, and a hint of maple syrup, layered between golden Belgian waffles for the ultimate comfort food experience.

Ingredients

  • 2Belgian-style waffles (homemade or frozen, toasted)
  • 1/2lb slow-cooked beef brisket, shredded
  • 1/2 cupsharp cheddar cheese, shredded
  • 1 tablespoonmaple syrup
  • 1 tablespoonunsalted butter
  • 1/2 teaspoonblack pepper
  • 1/2 teaspoongarlic powder
  • 1/4 teaspoonsmoked paprika
  • Optional: spicy brown mustard or garlic aioli for serving

Instructions

  1. In a skillet over medium heat, melt the butter.
  2. Add the shredded brisket to the skillet.
  3. Stir in the maple syrup, black pepper, garlic powder, and smoked paprika.
  4. Cook for 3–4 minutes, stirring occasionally, until the brisket is heated through and slightly caramelized.
  5. Toast your waffles until golden and crisp if not already done.
  6. Place one waffle on a plate and layer the warm brisket on top.
  7. Sprinkle shredded cheddar cheese over the hot brisket so it melts nicely.
  8. Optionally spread spicy brown mustard or garlic aioli on the inside of the top waffle.
  9. Top with the second waffle and press gently to form a sandwich.
  10. Slice in half and serve immediately while warm and melty.

Notes

For extra crunch, toast the waffles in an oven or air fryer instead of a toaster.
Substitute pulled pork or shredded chicken if brisket isn’t available.
To make it spicier, add pickled jalapeños or a splash of hot sauce to the brisket.
Gluten-free waffles can be used for a gluten-free version.
