White Sweet Potato and Honey Garlic Sausages

A hearty and flavorful recipe featuring roasted white sweet potatoes tossed with honey garlic glazed sausage, seasoned with herbs and finished with fresh parsley for a comforting meal.

  • 1lb smoked sausage, sliced into thick rounds
  • 3large white sweet potatoes, peeled and diced into cubes
  • 3 tablespoonsolive oil
  • 3 tablespoonshoney
  • 3cloves garlic, minced
  • 1 teaspoondried thyme
  • 1 teaspoondried rosemary
  • 1/2 teaspoonpaprika
  • 1/2 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • 2 tablespoonsfresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced white sweet potatoes with olive oil, thyme, rosemary, paprika, salt, and pepper.
  3. Spread evenly on a parchment-lined baking sheet and roast for 20–25 minutes until tender and slightly golden.
  4. In a skillet over medium heat, brown sausage slices until caramelized on the edges.
  5. Add honey and garlic to the skillet, stirring until the sausage is coated and the glaze thickens slightly.
  6. Combine the roasted white sweet potatoes with the glazed sausage in the skillet, tossing everything together.
  7. Garnish with fresh parsley before serving warm.
