Double Chocolate Marshmallow Cookies

Rich and chewy chocolate cookies with a gooey marshmallow center.


Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 12 large marshmallows, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in the dry ingredients until combined. Fold in chocolate chips.
  5. Scoop tablespoon-sized dough balls and flatten slightly. Place a marshmallow half in the center of each and wrap dough around it.
  6. Bake for 10-12 minutes until edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

You can customize the seasonings to taste.
